Be part of an exciting new restaurant opening on Charlotte Street in the heart of Fitzrovia. Launching in late autumn 2026, Dila is an Eastern Mediterranean restaurant seen through the lens of a Londoner – bringing together vibrant flavours, generous hospitality and exceptional produce.

We are looking for a warm, confident and highly organised Maître D’ to join our opening team. As the person leading Dila’s welcome, you’ll play a key role in shaping the guest experience from the moment a reservation is made to the moment our guests leave.

You’ll take ownership of OpenTable and the reservations journey, while leading a team of 2 Hosts to create a front door experience that feels personal, effortless and genuinely welcoming.

About Dila

Spanning two floors, Dila will have approximately 50 covers on the ground floor and a further 70 on the first floor, including a private dining room, alongside a 40-cover terrace.

Designed for sharing, the menu centres around seasonal meze, vegetable-led dishes and charcoal grills, combining indigenous ingredients and spices from across the region with exceptional produce sourced from local farmers, growers, fishermen and producers across the UK.

The drinks programme follows the same philosophy, with cocktails built around Dila’s own house-distilled gins alongside inventive serves designed to complement the food. A concise wine list will showcase producers from across the Eastern Mediterranean alongside selected Old World classics, with local draft beers and speciality coffee completing the offering.

About You and The Role

As Maître D’ at Dila, you will:

• Take ownership of OpenTable, confidently managing reservations, availability, table allocations, turn times, waitlists and guest profiles to maximise covers while maintaining an exceptional guest experience
• Lead, train and develop a team of 2 Hosts, setting the standard for a warm, polished and genuinely personal welcome at every service
• Manage the daily reservation book and seating plan, working closely with the Restaurant Manager and floor team to balance guest preferences with the commercial needs and flow of the restaurant
• Build meaningful relationships with our guests, recognising regulars and recording preferences, celebrations and important details so future visits can be made even more personal
• Oversee the complete arrival and departure experience, managing queues, walk-ins, waiting times and last-minute changes calmly and confidently during busy services
• Manage guest enquiries and reservation requests across telephone, email and OpenTable, ensuring communication is warm, accurate and timely
• Develop an excellent knowledge of Dila’s food, drinks and story, confidently answering guest questions and ensuring the Host team can introduce the restaurant with knowledge and personality
• Bring previous experience as a Maître D’, Head Host or experienced Host within a high-quality restaurant, with strong OpenTable knowledge, excellent communication skills, commercial awareness and a genuine passion for looking after people
