Be part of an exciting new restaurant opening on Charlotte Street in the heart of Fitzrovia. Launching in late autumn 2026, Dila is an Eastern Mediterranean restaurant seen through the lens of a Londoner – bringing together vibrant flavours, generous hospitality and exceptional produce.
We are looking for an experienced, passionate and hands-on Sous Chef to join our opening kitchen team. Working closely with the senior kitchen leadership, you’ll play an important role in bringing Dila’s food concept to life, leading the brigade through service and ensuring exceptional quality and consistency from preparation through to the plate.
This is an exciting opportunity to join Dila from the very beginning, help establish the kitchen culture and standards, develop the opening brigade and be part of creating something special in Fitzrovia.
About Dila
Spanning two floors, Dila will have approximately 50 covers on the ground floor and a further 70 on the first floor, including a private dining room, alongside a 40-cover terrace.
Designed for sharing, the menu centres around seasonal meze, vegetable-led dishes and charcoal grills, combining indigenous ingredients and spices from across the region with exceptional produce sourced from local farmers, growers, fishermen and producers across the UK.
The cooking is clean, ingredient-led and rooted in simplicity, allowing quality produce, bold flavours and thoughtful technique to take centre stage. Sustainability underpins our approach, from responsible sourcing and seasonality to a conscious effort to minimise waste throughout the kitchen.
About You and The Role
As a Sous Chef at Dila, you will:
- Support the senior kitchen leadership with the pre-opening of Dila, helping establish kitchen systems, standards, ways of working and a positive brigade culture from day one
- Lead the kitchen during preparation and service, ensuring dishes are delivered consistently to the highest standards of quality, flavour, presentation and timing
- Develop an excellent understanding of Dila’s Eastern Mediterranean influences, ingredients and cooking techniques, helping bring the identity of the menu to life
- Train, coach and develop the kitchen team, setting clear expectations and creating an environment where people can learn, progress and perform at their best
- Work closely with the front-of-house and bar teams to ensure excellent communication and a seamless experience for our guests
- Support ordering, stock management, food cost control, portioning and waste reduction, balancing exceptional quality with strong commercial awareness
- Maintain the highest standards of food safety, allergen management, cleanliness and Health & Safety, ensuring procedures are consistently followed across the kitchen
- Bring previous experience as a Sous Chef or experienced Junior Sous Chef within a high-quality, high-volume restaurant, with strong leadership skills, attention to detail and a genuine passion for exceptional produce and ingredient-led cooking
