Be part of an exciting new restaurant opening on Charlotte Street in the heart of Fitzrovia. Launching in late autumn 2026, Dila is an Eastern Mediterranean restaurant seen through the lens of a Londoner, bringing together vibrant flavours, generous hospitality and exceptional produce.

We are looking for an experienced, confident and engaging Senior Waiter / Waitress to join our opening team. As a senior member of the floor team, you’ll play an important role in bringing Dila’s style of generous hospitality to life, creating memorable experiences while supporting and setting the example for the wider team.

This is an exciting opportunity to join Dila from the very beginning, develop your knowledge of our food and drinks, and help establish the service culture of a brand-new restaurant in Fitzrovia.

About Dila

Spanning two floors, Dila will have approximately 50 covers on the ground floor and a further 70 on the first floor, including a private dining room, alongside a 40 cover terrace. Designed for sharing, the menu centres around seasonal meze, vegetable-led dishes and charcoal grills, combining indigenous ingredients and spices from across the region with exceptional produce sourced from local farmers, growers, fishermen and producers across the UK. The cooking is clean, ingredient-led and rooted in simplicity, allowing quality produce, bold flavours and thoughtful technique to take centre stage.

The drinks programme follows the same philosophy, with cocktails built around Dila’s own house-distilled gins alongside inventive serves designed to complement the food. A concise wine list will showcase producers from across the Eastern Mediterranean alongside selected Old World classics, with local draft beers and speciality coffee completing the offering.

About You and The Role

As a Senior Waiter / Waitress at Dila, you will:

• Deliver warm, confident and attentive service, taking ownership of your section and creating a personalised experience for every guest
• Develop an excellent knowledge of Dila’s menu, ingredients and Eastern Mediterranean influences, confidently guiding guests and making thoughtful recommendations
• Build strong knowledge of our wine, cocktails and wider drinks offering, identifying opportunities to enhance the guest experience through recommendations and upselling
• Support the smooth running of service, working closely with the kitchen, bar, host and management teams to maintain excellent communication and timing
• Build relationships with our guests, recognising regulars, preferences, celebrations and special occasions to create memorable and personalised experiences
• Maintain strong knowledge of allergens and dietary requirements, communicating information accurately and following all food safety procedures
• Bring previous experience as a Senior Waiter / Waitress or experienced Waiter / Waitress within a high-quality restaurant environment, with confidence, personality and a genuine passion for food, drink and hospitality
