We’re looking for a Head Bartender to lead the bar offering at Adalana, our modern all-day brasserie. You’ll be the face of our drinks programme—setting the tone for a relaxed, stylish, and welcoming guest experience from morning coffees to late-night cocktails. Whether it’s a perfectly served spritz at lunch or a thoughtfully paired wine for dinner, you’ll bring creativity, confidence, and care to everything you do.

About You and the Role

As Head Bartender at Adalana, you will:

• Lead the day-to-day bar service, ensuring consistency, quality, and warmth at all times
• Create and refine a drinks menu that complements the brasserie’s Northern European-inspired cuisine
• Train and inspire our Bartenders and Bar Backs, sharing your knowledge and setting high standards in both service and presentation
• Build strong relationships with guests, offering genuine recommendations and upselling with care
• Manage stock levels, support ordering, and maintain excellent cleanliness and organisation across the bar
• Work closely with the Restaurant Managers and wider team to shape and elevate the overall guest experience
• Ideally have experience using Micros or similar systems
• Be flexible and available to work a variety of shifts, including evenings, weekends, and bank holidays

The Newman will offer 81 rooms and suites, including a luxurious rooftop signature suite with a private terrace and dedicated wellness area. Guests can enjoy Adalana, our all-day brasserie inspired by Northern European flavours, and Gambit, our cocktail bar with a local, seasonal edge. The hotel also features an entire floor dedicated to Wellness.
