Be part of an exciting new restaurant opening on Charlotte Street in the heart of Fitzrovia. Launching in late autumn 2026, Dila is an Eastern Mediterranean restaurant seen through the lens of a Londoner – bringing together vibrant flavours, generous hospitality and exceptional produce.

We are looking for an energetic, organised and hands-on Barback to join our opening team. You’ll be an essential part of the bar operation, working alongside our bartenders to keep everything stocked, organised and ready for service, helping the team deliver an exceptional drinks experience to every guest.

This is an exciting opportunity to join Dila from the very beginning, learn from an experienced bar team, develop your knowledge of drinks and hospitality, and build your career within a brand-new restaurant in Fitzrovia.

About Dila

Spanning two floors, Dila will have approximately 50 covers on the ground floor and a further 70 on the first floor, including a private dining room, alongside a 40-cover terrace.

The drinks programme follows the same philosophy, with cocktails built around Dila’s own house-distilled gins alongside inventive serves designed to complement and enhance the food. A concise wine list will showcase producers from across the Eastern Mediterranean alongside selected Old World classics, with local draft beers and speciality coffee completing the offering.

About You and The Role

As a Barback at Dila, you will:

• Support the bartenders throughout service, ensuring the bar remains fully stocked, organised and ready to deliver fast and efficient service
• Prepare and maintain bar mise en place, including garnishes, glassware, ice, ingredients and other products required for service
• Replenish wines, spirits, beers, mixers and other stock throughout the shift, anticipating what the team needs before it runs out
• Maintain exceptional standards of cleanliness and organisation across the bar, storage and preparation areas
• Assist with deliveries, stock rotation, storage and inventory while helping minimise breakages and waste
• Work closely with the bartenders, floor and wider restaurant team to ensure smooth communication and a seamless guest experience
• Develop your knowledge of Dila’s house-distilled gins, cocktails, wines, beers and wider drinks offering, with opportunities to learn and progress within the bar team
• Bring energy, reliability and a positive attitude to every shift, with previous hospitality experience welcomed but a willingness to learn and genuine interest in developing a career in bars and hospitality equally important
